BEVERAGE & BAR MANAGER
BASIC FUNCTIONS:
- To direct and control the beverage department in such a way that all company service and operational procedures are fully utilized, yet revenue opportunities maximized.
- To be responsible for the Day to Day Resort Bar operations and to ensure the high level of service standards are maintained and consistent in our new highend leisure Dining Room, 85 Restaurant and 2 other bar outlets; all offering a 4 diamond service style.
- To be responsible for the Resort Wine program
- To ensure all beverage menus within the resort are current and up to date in POS and in hard copies
DUTIES & RESPONSIBILITIES:
1. To ensure the efficient operation of the beverage operation, by administration, planning and analyzing operations on a daily, weekly, monthly and annual basis.
2. To update all beverage/wine items in POS as required, ensuring that POS items & beverage/wine menu's correspond correctly.
3. To oversee the Bar operation within the resort by being actively involved in the day to day operation especially during peak operational hours
4. To ensure all operations of the beverage department adhere to budget controls as per company specifications.
5. To ensure all revenue areas reach company targets and provide incentives and motivation to encourage personnel to maximize sales.
6. Have a substantial knowledge of Wines & Beverages including Menu engineering.
7. To ensure that all personnel within the beverage department are aware of company procedures and Ontario Public Health regulations and that these become part of their daily work routine.
8. To monitor the quality and presentation of all beverage items and liaise with responsible personnel.
9. To ensure that the department is properly administered and that all paperwork is accurately prepared and submitted on a timely basis.
10. To ensure all inventories are taken on a scheduled basis and that usage is monitored and corrective action taken whenever necessary.
11. To liaise with Director of Restaurants to ensure that effective work schedules are prepared for all beverage personnel and that they are updated and reviewed on a regular basis.
12. To ensure that scheduled and effective staff training is carried out.
13. To evaluate and recommend position changes for bar staff based on performance and company needs.
14. To set up and ensure that a garbage separation procedure is enforced within the bar department
15. To liaise daily with the Director of Restaurants regarding operational matters assigned, new projects, etc.
16. To assist the Director of Restaurants with bar and supply inventories.
17. To be responsible for planning, set-up and smooth execution of all functions in all outlets.
18. Oversee execution of wine pairing dinners in all dinning area's ensuring all Mis en Plus is prepared ahead of time.
19. Host wine / beer pairing events as & when required.
20. To perform duties which may be necessary, as directed by management.
Organizational Relationships:
The position of Beverage & Bar Manager reports directly to the Director of Restaurants.
Working relationships with:
- All Department Heads
- Director of Food & Beverage
- Chef de Cuisine
- Asst. Restaurant Manager
- Restaurant Supervisor
Job Requirements:
~ Must be bondable
~Must be reliable, outgoing, service driven and self motivated
~Must be able to manage, coach and modivate team members
~ 3+ years working experience within a 4 diamond F&B operation with extensive wine knowledge.
~ Sommelier accreditation or equivalent experience required
~ Smart Serve certified
~ Demonstrated working knowledge of POS systems
