We are seeking an energetic, experienced, and highly motivated Assistant Distiller to join our team at Wayne Gretzky Estates Winery and Distillery in the heart of Niagara-on-the-Lake wine country. The 23,000-square foot facility nestled amongst the grapevines is the first combined winery and distillery in Ontario. Having the Wayne Gretzky winery, distillery & brewery under the same roof allows the team to execute a unique portfolio of products. From beer brewed from the same grains as whisky, to whisky finished in Ice wine and Cabernet Sauvignon barrels to Estate-exclusive artisanal craft wine spirits!
Reporting into the Head Brewer & Distiller, the Assistant Distiller is responsible for managing the day-to-day operations of the distillery in Niagara on the Lake with the goal of producing innovative spirits of the highest quality.
We are looking for a teammate with:
- University/College education'with a focus on formal brewing/distilling education an asset
- Minimum 2-3 years' experience in beverage alcohol production--preference working with distilled spirits
- Experience in distilling, evaluating spirit and making cuts as well gin recipe innovation from research to production
- Mechanical aptitude working with Pumps, Product transfers, Cookers, Fermenters, Pot Still, Continuous Distillation
- Experience working in a fast-paced production environment; excellent communication and organizational skills a requirement
- Ability to self-manage and successfully handle a variety of priorities and responsibilities
- Continuous Improvement mindset (HACCP, sanitation, safety, efficiency)
- Ability to work varied shifts, long hours on occasion, including weekends as required
- Experience operating a Forklift
This teammate will be accountable for:
- Daily operation of the distillery including the management of daily tasks (mashing, fermentation, distillation)
- Supporting the Head Brewer & Distiller in innovation development, including setting up and running various trials as well as adding creativity to the process
- Managing distillery production schedule and purchasing raw ingredients and inventory for production, as well maintaining stock of a dry goods and ingredients
- Working with the Quality team ensuring products meets quality specifications
- Supporting the Head Brewer & Distiller occasionally participating in tours and PR events
- Data entry into the liquid management system for transfers, distillations, mashes etc.
- Scheduling the Transportation of Dangerous Goods and associated paperwork; maintain distilling and operations records ensuring compliance with regulatory reporting and licensing requirements
- Working with Engineers to redefine the operation of the distillery to streamline processes
- Running alcohol analysis coming from the still to meet government regulations
- Ensures a safety-first culture by supporting all legislative and company Health and Safety policies and procedures and reports all unsafe working conditions / hazards to the Head Distiller
